I am currently sitting at my dinner table talking to Barry and sipping at his second last bottle of prickly pear mead. He made it in 2006, and it just keeps getting better. It tastes like alcoholic honey. I am posting this to my blog because I want a record of the recipe. The recipe is by Charlie Papazian an is for his favourite prickly pear mead… and for all the hard work this drink took and all the wonderful ingredients that went in… my god it tastes good now.
